Peanut Butter Cookies

We were just talking about baking cookies and what do you know it’s a cookie holiday!! So we decided to get out our Sturdiwheat Original Pancake Mix and make some cookies to celebrate. Oh and of course June is dairy month so serve them with a milk chaser! YUM!! Nothing like fresh cookies with a big glass of milk!

Ingredients
  

  • 1 cup peanut butter, creamy or crunchy
  • 1 egg
  • 1 tablespoon vanilla extract
  • 1 14-ounce can sweetened condensed milk
  • 2 cups Sturdiwheat Original Pancake Mix
  • 1/2 cup sugar

Instructions
 

  • Preheat oven to 350°F.
  • In a large bowl, combine peanut butter, egg, vanilla, and sweetened condensed milk. Mix until smooth.
  • Add pancake mix and stir until combined. Let dough chill in the refrigerator for one hour.
  • Pour sugar into a small shallow bowl.
  • Roll 1-inch cookie dough balls in sugar until coated and place on cookie sheets, 2 inches apart. With a fork, press down on the cookie dough balls in a criss cross pattern. Bake for 8-10 minutes. Cool on wire rack for 1 minute.
