Banana & Buckwheat Super Speedy Muffins
Thank you to Paul Drotos for sharing these muffins and his recipe with us. They are delicious and easy and have Sturdiwheat Buckwheat Pancake Mix in them!

Ingredients
- 2 ripe bananas, mashed (about 1 cup)
- 1/3 cup packed brown sugar
- 1/3 cup canola oil
- 1 egg
- 1 cup Sturdiwheat Buckwheat Pancake Mix
Instructions
- Preheat oven to 350°F. Line a 12 cup muffin tin with paper liners, or spray with nonstick cooking spray.
- In a medium bowl, mix banana, sugar, oil, and egg. Add pancake mix and stir until combined.
- Fill muffin cups 3/4 full with batter.
- Bake in 350°F oven for 15-20 minutes or until toothpick inserted in the center comes out clean.
