Veggie Sandwich Spread and Smorgastarta

Veggie Sandwich

This sandwich makes a great summertime lunch.  It’s light, it’s cold and it’s fresh!

Recipe Twist:  The veggie spread can also be used in the traditional Swedish smörgåstårta.  If you don’t know what that is, you should try it!  Smörgåstårta translates to “sandwich cake” and is simply layers of bread, creamy spreads/fillings and seafood like shrimp or salmon and then the whole cake is decorated with colorful veggies. Veggie Spread

  • 8 oz. cream cheese
  • 2 Tbsp mayonnaise
  • 2 Tbsp sour cream
  • 2 Tbsp crumbled blue cheese
  • 1⁄8 tsp dry mustard
  • 2 tsp lemon juice
  • 2 Tbsp milk
  • 1 1⁄2 tsp vinegar
  • 1 1/2 Tbsp dill or chives (fresh if you have it)
  • 1⁄8 tsp minced garlic
  • pinch of white pepper

Slice a baked loaf of either Sturdiwheats Garlic-Basil, Whole Wheat, Golden Grain White or Limpa Rye, or Dark Caraway Rye. Spread Veggie Spread on both slices of sandwich. Top with cucumber, lettuce, tomato slices, red onion, slice of swiss cheese (optional) and alfalfa sprouts.

Add fried bacon slices for a grown up BLT!! How about bacon and turkey…now you have a new club sandwich!!

Spread makes enough for 4-6 sandwiches.
