Rhubarb, Rhubarb and more Rhubarb!
These Dessert bars have a few steps butttttttttttttt are so worth it!!
Rhubarb Cream Bars
Crust:
1 cup Butter (softened)
2 cups Flour
¼ cup Sugar
Mix and pat in 9×13 pan and bake at 350 degrees for 10 minutes…
(Or use this easy Sturdiwheat Shortbread mix for your crust and mix with 1 cup of butter, 1/4 sugar . Pat in 9×13 pan and bake for 10 minutes)
Topping: Mix together
5 cups Rhubarb (chopped)
2 cups Sugar
1 cup Heavy Whipping Cream
3 Eggs
7 TBLS Flour
Pour this mixture over hot crust and bake at 350 degrees for 45 minutes or until set
Cool completely.
Frosting:
8 oz. Cream Cheese (softened)
1 cup Heavy Whipping Cream
½ cup sugar
½ tsp. vanilla
Mix together until smooth.
Refrigerate until set. Cut and serve. Garnish with fresh strawberries or raspberries, both go great with rhubarb!
