It’s National Peanut Butter Cookie Day!

We were just talking about baking cookies and what do you know it’s a cookie holiday!! So we decided to get out our Sturdiwheat Original Pancake Mix and make some cookies to celebrate. Oh and of course June is dairy month so serve them with a milk chaser!

1 – Cup Peanut Butter (Creamy or Chunky your choice!)

1  – Egg

1  – Tblsp. Vanilla Extract

1 – 14 oz. Can sweetened condensed milk

2  – Cups Sturdiwheat Original Pancake Mix

1/2 – Cup Sugar

In a large bowl, combine peanut butter, egg, vanilla and sweetened condensed milk.

Mix until smooth. Add Sturdiwheat Original Pancake Mix and stir until combined. Let dough chill in the refrigerator for one hour.

Preheat oven to 350 degrees. Pour 1/2 cup sugar into a small bowl. Roll cookie dough into 1″ balls, then roll in sugar until coated and place on cookie sheets, 2″ apart. With a fork press down on the cookie dough balls in a criss cross pattern. Bake for 8-10 minutes. Cool on wire rack for 1 minute.

YUM!! Nothing like fresh cookies with a big glass of milk!
