Coconut Pancakes

1 cup Sturdiwheat Original Pancake Mix
1 13 oz. can Coconut Milk
¼ Cup Sugar
2 cups unsweetened shredded coconut
 
Combine pancake mix, coconut and sugar in a bowl and set aside.
Warm Coconut Milk and stir into dry ingredients. Do not over mix, let sit 5 minutes.
 
Heat a non- stick griddle or frying pan with cooking spray or (butter for crispy pancakes – need to watch as not to burn) Pan is ready when water drops dance on the griddle.
Ladle ¼ cup mix on to the griddle, when bubbles form on top and the edges appear a little dry turn pancakes and cook until done.
 
Serve with shredded coconut and syrup. MMMMMMmmm a touch of the tropics!

Optional add chocolate chips or top with a chocolate sauce.
