Whisk together the pancake mix, water, eggs and lemon zest. Allow to stand one minute. Prehead griddle to 375°, lightly spray with oil if needed. Spoon batter onto griddle, spreading it out as you are spooning. Flip after 2 minutes. Squeeze lemon juice and sprinkle sugar to taste (about 1/2 tsp each). Roll up and eat!
Makes about 16 medium pancakes.
For a Swedish Pancake: Substitute Lingonberry jam for the lemon and sugar.
