Muffins

  • 2 cups Sturdiwheat Original Pancake Mix
  • 1⁄4 cup sugar
  • 2 eggs
  • 4 Tbsp. melted butter or margarine
  • 3⁄4 cup milk

Preheat oven to 400°. Combine Sturdiwheat Pancake Mix and sugar. Beat eggs in separate bowl. Combine mix and eggs and add butter and milk. Mix lightly with few strokes. The dough should be slightly lumpy and break off in lumps when poured. Fill paper-lined or greased muffin cups 2/3 full. Bake immediately in preheated oven for 15-20 minutes.

Makes 8-12 muffins.

For Blueberry Muffins: Add 1 cup blueberries (lightly floured). Fold into mix after all other ingredients.
