Zucchini Bread
- 1 cup Sturdiwheat Cereal
- 2 cups flour
- 1 tsp. baking soda
- 1 cup canola oil
- 11⁄3 cups sugar
- 2⁄3 cup brown sugar
- 3 large eggs
- 1 tsp. vanilla
- 1⁄4 tsp. baking powder
- 1 tsp. cinnamon
- 3 cups grated zucchini
- 1 cup chopped walnuts (optional)
Mix dry ingredients together. Beat eggs, sugars, oil and vanilla. Stir in dry ingredients, zucchini and nuts. Pour into two greased 9x5 loaf pans and bake at 350° for 50 minutes.
