Pineapple Baked Chicken

  • Sturdiwheat Original Pancake Mix
  • Boneless Skinless Chicken Breasts
  • Milk or lowfat yogurt
  • Pineapple slices
  • Honey

Wash chicken and pat dry. Dip into milk or yogurt. Roll in Sturdiwheat pancake mix. Place on well-oiled baking sheet or shallow pan. Bake at 350° for 1 hour, turning once after 30 minutes. 5-10 minutes before end of baking time, place pineapple slice on each chicken breast. Drizzle with honey, and continue baking until done.
