Carrot Bran Muffins

  • 2 cups Sturdiwheat Cereal
  • 2 cups 100% Bran
  • 1 cup hot water; pour over bran cereal
  • 3 1⁄2 cups flour
  • 4 tsp. baking soda
  • 1 cup canola oil
  • 1 cup sugar
  • 3⁄4 cup brown sugar
  • 3 large eggs
  • 1 tbsp. vanilla
  • 2 cups 1% buttermilk
  • 2 cups carrots, grated
  • 2 cups raisins

Mix oil, sugars, eggs and vanilla in a large bowl. Mix baking soda, Sturdiwheat cereal and flour in a separate bowl. Mix cereal mixture and buttermilk alternately into the creamed sugar mixture. Add bran and water mixture. Stir in carrots and raisins. Bake at 350˚ for 25 - 30 minutes.

Makes 24 large 4 oz. muffins.
