Pumpkin Bars

  • 1 cup Sturdiwheat Pancake Mix
  • 1 cup all-purpose flour
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1⁄2 tsp. cloves
  • 2 cups sugar
  • 2 cups pumpkin (15oz.)
  • 1⁄2 tsp. salt
  • 1 tsp. soda
  • 1⁄2 tsp. ginger
  • 1⁄2 tsp. nutmeg
  • 4 eggs
  • 1⁄2 cup oil
  • 1⁄2 cup water

Frosting

  • 1-3 oz. pkg. cream cheese
  • 1 tsp. vanilla
  • 1 3⁄4 cup sifted powdered sugar
  • 3⁄4 stick of butter
  • 1 Tbsp. milk

Preheat oven to 350°. Combine oil, sugar, pumpkin, and water. Mix well. Add the sifted dry ingredients, bake in a 10 x 15 greased and floured pan for 25-30 minutes.

Frosting: Combine butter and cream cheese, Mix well. Add remaining ingredients. Blend until smooth.
