
Different Shortcake

Good Morning, Sturdiwheat!
On the Big Island in Hawai’i there is a fruit that may live up to it’s name. It is grown on other tropical climates, but the Hawai’ians call it Liliko’i. Or Passion Fruit. Will let you wonder about the name. The blossom is complex and some say the best part of the plant. Judge for yourself.
Liliko’i fruit has a great and unique flavor. The fruit is normally crushed and used as concentrate to mix with other fruit juices or water. (Liliko’i juice is available in some supermakets on the mainland.)
But Hey! Mr. Ed’s Bakery in Honomu on the Big Island makes Liliko’i Butter (like apple butter). YUM! When I got home I mixed it with cream. WOW! A GREAT topping for fruit. Everyone who visits when this is on the dessert menu asks about it. Good sign!
Now I am going to try this with some fresh fruit on shortcake – Instead of the normal whipped cream.
What do you think?
Will let you know how it fares. Although with my “passion” for liliko’i, the results are already clear to me.




Dear Flapjack, I love to learn about a new (to me) food. Thanks. I’ll try to get some lilico’i on line and mix it with the strawberries for the shortcake topping. Have you put it on pancakes?
Oh My! Lilico’i on pancakes. It’s to LIVE for!
On the farm we had pancakes so often. And we were also treated to Swedish Pancakes. They were similar to but heartier and larger than crêpes – she did them on a lefse grill, whether she was making the larger pancakes or the regular ones. We enhanced any pancakes with strawberries, whipped cream, butter, maple syrup, brown sugar, peaches, blueberries, or whatever was around the house. Cream and sugar was a favorite too.
We had no idea that lilico’i existed. But now, yes, I have had lilico’i on pancakes. Lilico’i butter (like apple butter) mixed with cream. (Sounds like that favorite of cream and sugar from the farm but with the added flavor of lilico’i. You can’t beat it.) Put that on top of pancakes that have been laced with your choice of any fresh fruit. Try peaches! That’s a star for me. This morning I had a mango, so I tried that with the lilico’i. Yum.
But of course it has also sweetened the enjoyment of Sturdiwheat Buckwheat Pancakes (my favorite) and it was a winner for sure.

Got ahold of some Lilico’i butter from a friend and it was Out of This World! I’m going to try it on biscuits next.

Isn’t it great to find a new food?
Actually I tried the Lilico’i butter mixed with cream on Sturdiwheat shortcake with blueberries and strawberries. (Red, white and blue.) A perfect way to celebrate a national holiday (Memorial Day) and the reviews were raving. Awesome!
One of the best parts of mixing this Passion Fruit Butter with cream is that there is no recipe. Mix the amount that suits you. And of course one must keep tasting to find that taste that is right for you. Cook’s privilege. And such a good way to determine the taste. I can always find a way to get the cooks’ provilege, believe me. A real bonus.
